Pumpkin & Carrot Porrial


Vegetables are always my favorite stuffs to eat. I love eating any vegetable for my meals for sure as i think vegetables are tastier than Non-vegetarian. And when speaking of pumpkins... I love pumpkins... I love the sweet and spicy combination of food much more than the usual ones... So i am always obsessed with Pumpkins, Beetroots, Carrots and few other sweet vegetables... And here i have come up with the combination of 2 sweet vegetables... Pumpkin + Carrot... It really tasted good guys.. Do try it out and give your comments :) 

   

Ingredients:
  • Pumpkin – ¼ kg
  • Carrot – ¼ kg
  • Big onion – 1 chopped lengthwise
  • Green chilli – 2 cut lengthwise
  • Curry leaves – To temper
  • Coriander Leaves – To garnish
  • Turmeric Powder – ½ tspn
  • Salt  - to your taste.




Method:
  • Wash the vegetables cleanly and cut the pumpkin and carrot into smaller cubes so that it would be easier to cook.
  • Take a pan and add 2 tspn of oil to it.
  • Add the cumin seeds once the oil is heated and wait till it splatters in low flame.
  • Add the curry leaves, chilies and chopped onions and sauté for 2 min until the onion turns slightly brown.
  • Add the cleaned and cut vegetables and add a cup of water to it.
  • Add the turmeric powder and salt and cook it in medium flame for 5 – 10 mins until the vegetable is cooked well according to your convenience. But do not overcook it as it might become mushy.
  • Add the coriander leaves once it got cooked and off the flame.
  • Serve it with any kind of variety rice and also with meals. 

Aval Uppma




Ingredients:
  • Aval – 200gms
  • Big Onion – 1 (Chopped lengthy)
  • Red chillies – 2 medium sized
  • Cumin seeds – A little to temper
  • Curry leaves – A little to temper
  • Coriander leaves – To garnish
  • Turmeric powder – ¼ tspn
  • Salt – To taste


Method:

  • Take aval and soak it in water filled cup for 3 minutes. Do not leave for a long time as it becomes mushy.
  • Drain the water from the aval and keep it aside.
  • Take a pan and add 2 tspn of oil. Once the oil is heated add the cumin seeds and wait until it splatters.
  • Once the cumin seeds splattered, add the red chillies, curry leaves and the chopped onions and sauté until the onion turns brown.
  • After that add the aval to the pan and sauté for 2 minutes in low flame.
  • Add the turmeric powder and salt to the aval and sauté for 2 more minutes.
  • Once it’s done off the flame and add the coriander leaves and serve it hot with pickle.
(Note: You can also add vegetable like carrot, beans and peas if you like as it adds nutrition to your food. But to keep it simple I haven’t added any)

Pumpkin Halwa


Ingredients

* Pumpkin-500grams

* Sugar-250grams

* Ghee-100grams

* Cardamom-4



Methods to prepare Pumpkin Halwa

* Chop Pumpkin finely.

* Fry choped Pumpkin in an empty pan.

* Add Sugar when water gets dissolved in Pumpkin.

* Stir it for sometime.

* Now add grinded cardamom.

* And add Ghee, again and again stir till it becomes like Halwa.

* Turn off the stove and pour Halwa in ghee applied tray.

* Slice the Halwa and serve as hot or chill.

Carrot Halwa


INGREDIENTS

Carrot – 250 gms.
Sugar – 1 and a half cup
Milk – 3/4 cup
Cashewnut – 8
Cardamom – 2
Saffron – a pinch



METHOD OF PREPARATION

Scrap carrot using a scraper.
Heat 1 tbl. sp. pf ghee and fry carrot scrapings.
Turn well and fry for 5 minutes.
Add ghee if necessary.
Now add 3/4 cup of milk and 1/4 cup of water.
Cook well.
When the scrapings get cooked, add sugar, ghee, cardamom powder, saffron and kesari powder.
Stir well.
When the mixture leaves the sides, fry the cashewnuts in ghee and add.
Remove from the fire.

Wheat Uppma


The wheat uppma is one of the quick done breakfast which is often made by my mother. It is a healthy as well as a tasty recipe which is even loved by the kids. Try it and start your day with healthy and yummy breakfast :) 

Ingredients:

Wheat (grained into fine granules which will be sold in grocery shops) – 200gms
Big Onion – 2 chopped lengthwise
Tomato - 2 Chopped finely
Carrot - 1 finely chopped
 Beans - 4 finely chopped
Green peas - A few. (Use fresh peas) (If u r using the stored peas, then do soak it for 2 hours before use)
Green Chilli – 2 medium sized cut lengthwise
Curry leaves – A few for tempering
Coriander leaves – A few for garnishing
Mustard seeds – For tempering
Urad dhal – For tempering
Salt – To taste




Method:
  •    Heat oil in a pan.
  •    Add mustard seeds and let it crackle.
  •    Add urad dhal and curry leaves and stir.
  •    Add the onion and sauté till it turns brown.
  •    Add carrot, beans, peas, green chilli's and salt to taste according to you and saute for few minutes say upto 3 minutes. 
  •   Then fill it with 2 large cups of water keeping it in low flame and let it boil.
  •    Once the water starts boiling add the wheat grains little by little and keep on stirring continuously to avoid the wheat getting clustered.
  •    Sauté the wheat grain until it the water gets fully absorbed.
  •    Add coriander leaves and sauté it and turn off the flame.
  •    Serve hot with onion or mixed vegetable raita.

Note:

Serve the dish while it’s hot. Coz once it gets cold it turns a bit solid to eat and the taste might gets differed too.
