காளான்


காளான் வகைகள்:
இந்தியாவில் 8 வகையான காளான்கள் உள்ளன. இவற்றுள் மொக்குக் காளான், சிப்பிக் காளான், வைக்கோல் காளான் என்ற மூன்று வகை மட்டுமே உற்பத்தி செய்யப்படுகிறது.

காளான் மருத்துவ பயன்கள்:
காளான் இரத்தத்தில் கலந்துள்ள அதிகப்படியான கொழுப்பைக் கரைத்து இரத்தத்தைச் சுத்தப்படுத்தும் தன்மை கொண்டது. இதனால் உயர் இரத்த அழுத்தம் மற்றும் இரத்த நாளங்களின் உட்பரப்பில் உண்டாகும் கொழுப்பு அடைப்பைத் தடுக்கிறது.
காளானில் உள்ள லென்ட்டைசின் (lentysine) எரிட்டிடைனின் (eritadenin) என்ற வேதிப் பொருட்கள் இரத்தத்தில் கலந்துள்ள ட்ரை கிளிசஸ்ரைடு பாஸ்போலிட் போன்றவற்றை வெகுவாகக் குறைக்கிறது.
இதில் எரிட்டினைன் கொழுப்புப் பொருட்களை எந்தவித பாதிப்பும் இல்லாமல் இரத்தத்திலிருந்து வெளியேற்றி பிற திசுக்களுக்கு அனுப்பி உடலை சமன் செய்கிறது. இவ்வாறு உடலில் அதிகம் தேவையில்லாமல் சேரும் கொழுப்பு கட்டுப்படுகிறது.
இதனால் இரத்தம் சுத்தமடைவதுடன் இதயம் பலப்பட்டு நன்கு சீராக செயல்படுகிறது. இதயத்தை பாதுகாப்பதில் காளானின் பங்கு அதிகம்.
பொதுவாக உயர் இரத்த அழுத்தம் ஏற்படும்போது உட்புறச் செல்களில் பொட்டாசியத்தின் அளவு குறையும். வெளிப்புறச் செல்களில் உள்ள சோடியம், உட்புறமுள்ள பொட்டாசியத்திற்கு சமமாக இருக்கும். இரத்த அழுத்தத்தின் போது வெளிப்புறத்தில் சோடியம் அதிகரிப்பதால் சமநிலை மாறி உற்புறத்தில் பொட்டாசியத்தின் அளவு குறைகிறது. இதனால் இதயத்தின் செயல்பாடு மாறிவிடுகிறது. 
இத்தகைய நிலையைச் சரிசெய்ய பொட்டாசியம் சத்து தேவை. அவை உணவுப்பொருட்களின் மூலம் கிடைப்பது சாலச் சிறந்தது. அந்த வகையில் பொட்டாசியம் சத்து அதிகம் உள்ள உணவு காளான்தான். 100 கிராம் காளானில் பொட்டாசியம் சத்து 447 மி.கி. உள்ளது. சோடியம் 9 மி.கி உள்ளது.  எனவே இதயத்தைக் காக்க சிறந்த உணவாக காளான் உள்ளது.

மேலும் காளானில் தாமிரச்சத்து உள்ளதாகவும் கண்டறியப்பட்டுள்ளது. தாமிரச்சத்து இரத்த நாளங்களில் ஏற்படும் பாதிப்பை சீர்செய்யும்.
காளான் மூட்டு வாதம் உடையவர்களுக்கு சிறந்த நிவாரணியாகும்.
மலட்டுத்தன்மை, பெண்களுக்கு உண்டாகும் கருப்பை நோய்கள் போன்றவற்றைக் குணப்படுத்துகிறது.
தினமும் காளான் சூப் அருந்துவதால் பெண்களுக்கு உண்டாகும் மார்பகப் புற்று நோய் தடுக்கப்படுவதாக காளான் பற்றிய சமீபத்திய ஆராய்ச்சியில் கண்டுபிடித்துள்ளனர். 
100 கிராம் காளானில் 35 சதவீதம் புரதச்சத்து உள்ளது. மேலும் உடல் வளர்ச்சிக்குத் தேவையான அமினோ அமிலங்கள் உள்ளதால், குழந்தைகளின் உடல் வளர்ச்சிக்கு சிறந்த ஊட்டசத்தாக அமைகிறது.

CHOCOLATE PUDDING !!!

Ingredients:

  • Butter - 1tspn
  • Cashewnut - 7
  • Milk - 1 cup
  • Chocolate melting - 4 tspn
  • Brown sugar - 1 1/2 tspn

Preparation:
  1. Heat the pan.
  2. Add butter, cashew, Milk, chocolate melting, brown sugar.
  3. Transfer the mixture into a small cup. 
  4. Take a pressure cooker and add water to it. 
  5. Place the small cup inside the cooker and close the lid. (No need of using the whistle)
  6. Leave it for 10 to 15 mins. 
  7. Switch off the flame.
  8. Add the chocolate melting of 2 tspn over the pudding once again to taste better. 
  9. Serve hot or cold.

Chocolate sauce !

Ingredients:

    • Milk - 1/2 cup
    • Sugar - 1/2 cup
    • Coco powder - 2 tspn
    • Corn flour - 1 tspn




Preparation:
  1. Heat a pan.
  2. Boil the milk.
  3. Add the sugar and stir until its dissolved.
  4. Add coco powder and corn flour and stirr well.
  5. Stir for few mins until it becomes semi solid and off the flame. 
  6. Keep it in refrigerator until it becomes cold.
  7. Add it for the cakes and biscuits and serve for a delicious taste.

Cauliflower Manchurian !

Ingredients:

  • Cauliflower - 1 cup
  • White pepper powder - 1 tspn
  • Egg - 1
  • Corn flour - 2 tspn
  • Ginger garlic paste - 1 tspn
  • Salt
  • Onion - 1
  • Chopped Ginger and cellary 
  • Fresh red chilli paste - 1 tspn
  • Spring onions
  • Mint leavves
  • Pepper powder
  • Lemon extract

Preparation:
  1. Mix white pepper powder, egg, corn flour, ginger garlic paste and salt. 
  2. Mix cauliflower with the above said mixture for half an hour
  3. Deep fry the cauliflower
  4. Heat oil in a pan
  5. Add chopped onion, ginger, cellary, fresh red chilli paste, ginger garlic paste and cauliflower fry.
  6. Saute well and add pepper powder, spring onion and mint leaves. 
  7. Saute well and add salt to taste and add lemon extract finally.

Channa Potato Gravy !

Ingredients:

  • Channa
  • Baby Potatos - 6 nos
  • Coriander seeds - 2tspn
  • Curry leaves
  • Garlic
  • Green chilli
  • Salt
  • Cumin seeds
  • Onion and tomato chopped
  • Dhaniya powder
  • Garam masala powder

Preparation:
  1. Grind the coriander seeds,curry leaves, garlic, green chilli with salt.
  2. Boil the potatoes and channa in pressure cooker. 
  3. Heat oil in a pan.
  4. Add cumin seeds, onion, tomato and saute till it turns brown.
  5. Add dhaniya powder and add the grinned powders(1) and add water.
  6. Make it boil well.
  7. Add channa and boiled potatoes with garam masala and salt.
  8. Stir it well tell it gets blended.
  9. Add coriander leaves and serve it hot for chappathi, puri and rice. 

PALAK PANEER !

Ingredients:

  • Palak - 200 gms
  • Paneer - 200 gms
  • Curd - 200 gms
  • Chilli powder
  • 1/4 tspn turmeric powder
  • 2 tspn dhaniya powder
  • 1/2 tspn garam masala powder
  • Pinch of chat masala and black salt
  • Salt
  • 2 tspn oil
  • Chopped onion - 2
  • Chopped tomato - 4
  • Cashew nut - 10 

Preparation:
  1. Beat the curd well and keep it aside. 
  2. Make a paste of cashew nut. 
  3. Add all powders and salt to curd and mix it well.
  4. Then add blanched palak and grind it. 
  5. Heat oil and butter together in a pan.
  6. Saute with pattai, kirambu, ellachi, onion, gignger garlic paste and tomato. 
  7. Add the palak to it. 
  8. Add salt, pinch of chilli powder, paneer, cashewnut paste and saute for few minutes. 
  9. Off the stove and add fresh cream to it for final serving. 
  10. Serve it with chappathi, naan and parathas. 

Paneer Tikka

Ingredients:

  • Paneer
  • Curd
  • Salt
  • Chilli powder
  • Garam masala powder
  • Dhaniya powder
  • Ginger garlic paste

Preparation:

  1. Marinate the paneer cubes in curd,salt,chilli,garam masala & dhaniya powder and ginger garlic paste for 1 to 2 hours.
  2. Then heat oil in a pan.
  3. Add the marinated paneer cubes for deep and shallow fry. 
  4. Add little oil in a pan and add some capsicum and chopped onion and stir till it turns brown.
  5. Add tomato sauce and soya sauce for blending and stir for few minutes and off the flame.
  6. Take a lemon and garnish the tikka with coriander leaves, sliced onions and lemon. 
  7.  Serve it hot as a starter or evening snack.

Priceless Moments !!!

Have you ever come across few moments as priceless? Have you been cherished over such moments? If not try doing it today. Each and every moments are priceless. But to make it a remarkable one it must be either happy or a sad one. I've listed few moments to have as a priceless ones in life:


  1. Realizing you were smiling the entire time you were talking to someone, right after you hang up the phone.
  2. The warm coziness of my own bed after I return home from a long business trip.
  3. Playing Rock-Paper-Scissors to settle a decision with one of your friends.
  4. When a wild animal is tame enough to eat food right out of your hand.
  5. Crying on my sister’s shoulder.  Without the help of my family and close friends, I would be lost in a world of emotion, stress, and confusion.
  6. Picking and eating fresh fruit right off the tree.
  7. The joy of watching a baby smile.
  8. The proud look on my 4-year-old son’s face when he learns a new skill.
  9. The bittersweet emotions that rush through your body on the very last day of high school.
  10. Time with the love of my life.  Last May, my husband of 27 years was diagnosed with cancer and given 3 to 6 months to live.  We prayed, cried, loved, and laughed.  Now, 11 months later, we are still savoring every smile, kiss, and breath.  We know these moments will end sooner rather than later, but we are so grateful for the time we do have together.
  11. The rush you get when you’re driving on the open road and your favorite song randomly plays on the radio.
  12. The comforting sound of my father’s car pulling into the driveway when he finally returns from a long business trip.
  13. When my baby girl looked up at me and said, “Daddy!” for the very first time.
  14. Seeing two elderly folks who are madly in love.  It’s a sight of love that has surpassed the tests of time.

  26. The simple fact that I can read the sincerity in her eyes when she says, “I love you.”
  27. The awesomeness of skipping rocks across water.  It doesn’t matter how old I get, this one never gets old.
  28. The tears of joy that flow when you see your beloved for the first time after a 10 month deployment to Iraq.  All the months of struggle and loneliness are washed away the second he gets off that plane.
  29. The soothing comfort of an old familiar smell.  Earlier today pulled into my parent’s driveway after being away for over a year.  I could smell familiarity in the air – the scent of the pine tree in the neighbor’s yard.  And as I headed through the front door, more familiar smells consumed my senses.  Gosh, it feels good to be home.
  30. The keen wisdom my grandfather has acquired slowly over the course of 86 years, and the amazing stories and life lessons he shares with me every time I visit him.
  31. A first kiss.  The sweet rush of butterflies in your tummy when you kiss someone special for the very first time.
  32. When you look into the eyes of your best friend and know, without a doubt, that you can trust her.  You can see it in her eyes and you can feel it in your heart.  She has no ulterior motive.
  33. The first sight of daffodils poking through the snow after a long, hard winter.
  34. The realization of true love.  The warm feeling you get many years after your first kiss when you realize you married the right person.
  35. The surreal beauty of watching lightning strike in the distance.
  36. An unexpected compliment.  It seemed like just another dreary Monday morning, but when she walked into my office and said, “I love your shirt! That color looks great on you,” it brightened the rest of my day.

Father's Day Gift Ideas

Father's day special recipe

3. APPLE PIE :
Ingredients : 


1½ cup all-purpose flour
½ cup vegetable oil
2 tbsp cold milk
1½ tsp white sugar
1 tsp salt
6 apples, cored and sliced

Filling :


¾ cup white sugar
3 tbsp all-purpose flour
¾ tsp ground cinnamon
½ tsp ground nutmeg
1 tsp salt
6 apples, cored and sliced

Topping:


½ cup all-purpose flour
½ cup white sugar
½ cup butter



Preparations:

Preheat oven to 350 F
Crust : Mix all the ingredients in a large bowl, blend them evenly and make dough. Spread the dough uniformly in the baking tray.
Filling : Mix all the ingredients and sprinkle the mixture over apples and coat the apples properly. Spread the remaining mixture evenly in an unbaked pie shell.
Topping : Mix all the ingredients until they are evenly distributed and crumbly in texture. Sprinkle the mixture over apples.
Bake the pie at 350 F for 45 minutes 

Father's day special recipe

2. CHEESE CAKE :

Ingredients : 


Cake 


¾ cup cracker crumbs
½ cup slivered almonds, toasted and finely chopped
¼ cup firmly packed brown sugar
¼ cup margarine or butter, melted
8 ounce cream cheese, softened
14 ounce Sweetened Condensed Milk
3 eggs
1 teaspoon almond extract

For the Icing:


1/3 cup dark brown sugar
1/3 cup whipping cream
½ cup toasted slivered almonds



Preparations:

Preheat oven to 300 degrees F.
Combine crumbs, nuts, sugar and margarine;
press firmly on bottom of baking pan.
Beat cheese until it is fluffy in a larger bowl.
Gradually beat in condensed milk until smooth.
Add eggs and mix well.
Pour into prepared pan.
Bake for 55 to 60 minutes.
Cool it.

Prepare the icing on the cake:


In small saucepan, combine firmly packed dark brown sugar and Whipping Cream.
Cook and stir until sugar dissolves.
Simmer 5 minutes or until thickened.
Remove from heat;
stir in chopped toasted slivered almonds.
Spread evenly over the cake.  

Father's day special recipie

1. BABY CORN MIXED WITH YOGURT SAUCE

Ingredients:
Baby Corn.......................1 cup (boiled or steamed..)
Salt..............................according to taste. 
Pepper.........................same as salt..
Suger(optional) ..........same as salt 
Cabbage Leaves..........1/2 Cup steamed and chopped
Carrots.......................1/2 cup steamed and chopped 
Capsicum...................1/4 cup Steamed and chopped
Ginger........................1/2 tsp,finely chopped 
Chilli.................. ......1 finely chopped
Olive Oil/white butter.......1 tsp 
Yogurt Sauce
(you may also choose cream or melted cheese in case yogurt is not available)
whip it up according to your preference.
Incase u want it salty or sour.. add 2-4 drops of lemon juice to it 
If u like it sweet add a tsp of sugar. a pinch of pepper will enhance the taste. 
Parsley/mint leaves for the garnishing...............................................................2-3 leaves


Preparation:


Mix all the ingredients from item no# 1-9 lightly in a shallow bowl. Cover it up and let it be for a while (allow atleast 45 min.to bring out the flavor). Add the yogurt sauce, generously over the steamed vegetable mix, once all the flavors are soaked and absorbed together. Garnish with Parsley or mint leaves.
Chill for 2 hours before you serve.

The idea of creating a day for children to honor their father began in Spokane, Washington US. SonoraSmart had introduced the thought while listening to a Mother's Day sermon in 1909. Sonora Smart, along with her siblings was single-handedly raised by her father, William Jackson Smart after the death of her mother. In order to convey her love, appreciation and regards for her father she chose to hold the firstFather's Day celebration in Spokane, Washington on the 19th of June, 1910 as Sonora's father was bornin June

President Calvin Coolidge, in 1924, supported the idea of a national Father's Day and The National Father's Day Committee was officially formed in New York City in 1926. A Joint Resolution of Congress recognized the Father's day in 1956 and in 1966 which finally made it permanent in 1972. President Richard Nixon established a permanent national observance of Father's Day to be held on the third Sunday of June. Thus, the Father's Day, bourne out of a daughter's love and respect for her father came into practice and eventually is celebrated across the world over in the recent times. However, the Father's Daycelebrations take place at different times of the year.
